Sumbitches cookies

If you saw this week’s season premier of How I Met Your Mother you already know what sumbitch cookies are.
If you haven’t they are cookies with peanut butter, caramel, chocolate.

Of course I had to make them!

Here is what I made.

1 cup firmly packed brown sugar
3/4 cup sugar
2/3 cup butter softened
3/4 cup peanut butter
2 eggs
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (10-ounce) package mini milk chocolate caramel-filled candies, unwrapped, cut in half

I used Rolos, they took forever to unwrap. (or at least it seemed that way while unwrapping them.)

Heat oven to 375°F. Combine brown sugar, sugar and butter in large bowl. Beat at medium speed until creamy. Add peanut butter, eggs and vanilla; continue beating until well mixed, scraping bowl if necessary. Add flour, baking soda and salt; beat at low speed until well mixed.

Shape rounded tablespoonfuls of dough into 1 1/4-inch balls. Press 1 candy half in center of each ball, cut-side up. Form dough around candy, completely covering candy. Place 2 inches apart onto greased cookie sheets. (Cookies spread and flatten as they bake.

Next time I make them I will chill the dough before rolling them, my hands got really sticky.

Bake 10-12 minutes or until light golden brown around edges. Let cool 1 minute on cookie sheets. Remove to cooling rack.

These cookies are really good and addictive. I am so glad that I sent some with my husband to work, or I would eat way too many of them today. When I make them again I will make sure to have enough peanut butter, I was about a tablespoon short.
