If you like Taco Bell’s chicken quesadillas you should try this recipe, I like the “real thing” except for one thing, there isn’t much chicken. My husband and I created the recipe a few years ago after much trial and error.
You will need
chicken baked/cooked however you prefer even left overs (we prefer grilling it) we usually use 1 large breast or about 3 cups shredded/diced chicken.
6-8 large flour tortillas
8 ounces sour cream
1 packet your favorite taco seasoning
2-3 tablespoons taco sauce. (optional, it is closer to Taco Bell’s without but the kids eat it better with the taco sauce)
Mix the sour cream, taco seasoning, and taco sauce together.
Then spread sauce onto tortillas.
Then add chicken.
I only added chicken to half because we fold it in half and brown it on a flat pan, if you use a quesadilla maker put chicken on the whole shell and place a second sauced tortilla (sauce side down) on top each quesadilla you prepare.
Then cut with a pizza cutter into 4 to 8 sections and serve.
